Meat Analogs: Challenges and Perspectives provides an overview on the subject that is followed by an inventory of research perspectives to highlight the importance of issues and research relating to meat analogs. It explores the severe demographic, ecological, and economic and sociological constraints and uncertainties that exist in the allocation of food production resources. Alternative solutions, in particular meat substitutes, aka, meat analogs or mock-meats are discussed, as are dietary patterns and the control of markets. Provides an overview on the subject Proposes an inventory of research perspectives Highlights the importance of the issues and identifies avenues of research

Abstract: A rapid increase of world population and a lack of traditional protein sources create preconditions for the search of alternatives and development of new acceptable food products. Insects currently are perceived as an alternative source of proteins in a few European countries. Twin screw high-moisture extrusion applied to the mixture of protein concentrates (insect with concentration of 15–50% dry matter and soy) and water resulted in fibrous meat analogs with hardness texture and protein composition similar to meat. The best result (most similar to standard soy-based sample) was highlighted for the mixture of protein concentrates (40% Alphitobius diaperinus and 60% soy dry matter). Scanning electron microscopy indicated further improvement of texture for the samples with 5–10% of soy fiber. Highlights: High-moisture extruded meat substitutes can contain up to 40% of insect biomass. Water content was important for biting properties. Adding of soy fiber improved the texture of the samples.

This is a single-volume source of information on the world's oilseeds including major, minor, unexploited and non-edible oilseeds. The book discusses composition, processing technologies and utilization, including current developments, in the processing of oilseeds into oil, protein products and other by-products. The authors present tabular data on nutritional composition and oil characteristics and discuss technologies for removing anti-nutritional and toxic compounds. Oil extraction processes are discussed, and novel uses of major crops are presented.

Whey Processing, Functionality and Health Benefits providesa review of the current state of the science related to novelprocesses, functionality, and health benefit implications anddocuments the biological role of whey protein in selected areasthat include muscle metabolism after exercise, muscle and bodycomposition in the elderly, weight management, food intakeregulation, and maintenance of bone mass. The topics addressed andthe subject experts represent the best science knowledge base inthese areas. In some of these areas, the state of the art andscience are compelling, and emerging data are confirming andsolidifying the human knowledge base. Collating the understandingand knowledge of the metabolic roles of whey protein and developingthe clinical datasets that demonstrate efficacy for improving humanhealth will speed up new product innovations and sustainableopportunities for the food industry as evidenced by the processingand functionality research conducted so far. Topics covered in this volume include: Whey utilization history and progress in processtechnology Fractionation and separation with health implications Whey emulsions and stability in acidic environments Current applications in films, coatings, and gels Texturized whey in snacks, meat analogs and candies Nanoparticles in hydrogels for delivery of bioactivecomponents Whey protein role in human health Health and wellness, processing and functionality are clearlyareas of continuing research and offer growth opportunity for thefood industry. The benefits from such concentrated body ofknowledge will be new ingredients and innovative products thatimprove overall wellbeing. Whey Processing, Functionality andHealth Benefits provides food scientists and manufacturersinsight into the health implications of whey protein science.Ultimately, the consumer will benefit from better formulated, healthier products.
